Diatom is a passion project of iconic Chardonnay producer Greg Brewer of Brewer-Clifton. He describes this wine as motivated by the pursuit of subtraction—the polishing of a single grain of rice until reaching its ultimate inner core. Tasting notes of white peach and saline emerge from aromas of lemon, citrus blossom, and wet sand. The name “Diatom” is inspired by the fossilized plankton (diatomaceous earth) replete in the region, which imparts notable minerality.
