This blend of two vintages from two vineyards combines the delicate aromatics of a younger wine with the structure and developed flavors from a previous year’s vintage, with a palate of herbaceous, savory notes of resin and wool with black cherry and dried plums. The older grape was spontaneously fermented whole cluster, then gently foot tread and punched down by hand. The younger grapes were 95% destemmed and punched down by hand twice per day to dryness.
