The second example of 100% Ribolla GIalla from Toshokan, after pressing, this wine was aged for 10 months “sous ville” in neutral French oak without being topped, to encourage the development of a veil of surface yeast. This technique contributes spice and nuttiness and helps soften the tannic nature of the skin fermented Ribolla. Tasting notes of dried apricot, sour cherry pit, nutmeg, and citrus pith.
